
Mint N More Farm
Located in rural Marion County, Iowa, Mint 'N More Farm is the hub and inspiration for all we do. With permaculture practices we will operate a demonstration farm as well as incubate new gardens and farms for beginning farmers. Our goal is to be a resource for those interested in growing food in harmony with the earth and an inspiration to new home gardeners, homesteaders and production farmers.
The Farm Plan

Demonstration Permaculture Farm
Currently, the farm has several fruit guilds and small herb gardens, but is not producing significant crops. In 2025 we will be designing the rest of the gardens and farm with permaculture principles. We aim to hire a farm manager in the second half of 2025 to help bring these plans to life.
The farm will eventually have produce from it's fruit trees, herbs, and other perennial food plants. We intend to also have a nursery for organic trees to sell to other farms.
A permaculture farm is a sustainable farming system that mimics natural ecosystems to create self-sufficient food production systems using a holistic approach to land management and agriculture that aims to reduce waste, prevent pollution, and improve biodiversity. We intend to showcase the latest teachings in permaculture to inspire others and test out new methods of growing food.
Incubator Farm
We will be building out an additional 40 acres of land across from the home farm to host beginning farmers or those who want to try farming on a bigger scale. This incubator will allow access for beginning farmers to grow food for market and home use while also adding to the community knowledge. The goal is that a person could start with one long row, move up to several rows, then potentially move to a separate piece of land. We will be partnering with other organizations to assist our farmers in procuring land of their own when they are ready. We will potentially operate satellite farms when it makes sense for our tenants. Additionally, the farm can host on-farm research trials in partnership with academic or trade organizations. We are spending the next couple months visiting incubator farms in the Midwest to learn about the best way to operate ours. We are already inspired!
Farmer Resources and Research
When you are producing food all day it's difficult to have time to stay up-to-date on the latest research and best practices.
We will be sifting through what's important to growers in our area and bring them curated ideas and research they can put to use without all the searching.
We will also be asking farmers what services they would like to outsource such as back office accounting, grant or funding applications, technology, delivery, procurement and so on. We can then create value-added services that free farmers up to do what they do best: Grow food!
We intend to also provide assistance for land acquisition advice and resources for those working toward their own farms under our umbrella or with valued partners.

The Waechter House
Mint N' More Farm has a beautiful centerpiece with the Historic Waechter House, known to many around Pella as the Boardwalk House. This historic four square was moved from the Central College Campus in 2018. The home was placed on a new foundation and is being restored to it's original glory with modern touches to make it accessible to all who visit. Pella Historic Trust published this update in 2022.
Recently, Mikol has continued the detailed historic restoration and is finalizing period paint and wallpaper schemes as well as making plans for the use of the home as it becomes the focal point of Mint 'N More Farm gardens. It will eventually act as an education space and library as well as a general welcome center for the farm.
